At the beginning of 2015, The Paris Creperie and the Delta Foodservice Group launched an Open Book Management program for their entire Paris team.  ​9 months later, the business's profitability has soared, the wages of staff have increased significantly and company culture is at an all-time high with the entire team now focused on one goal: delivering a great product with exceptional service and generating significant profit.  
 
This workshop with Catering Manager Nick Mallia and Delta Foodservice Education Director Joe Grafton will tell the story of how making a commitment to financial education at Paris has led to tremendous business results and has positioned the organization for growth and profitability in the years ahead. The presentation will conclude with a Q&A session and general discussion. 
 
Joe Grafton is the passionate leader of the Open Book Training program at Delta Foodservice.  As the founder and first Executive Director of Somerville Local First, and subsequently as the Director of Development and Community Engagement of the American Independent Business Alliance, Joe has more than a decade of experience as a leader, technical service provider, speaker, facilitator and consultant for small businesses and nonprofits.
Nick Mallia is the longtime catering & events manager at Paris Creperie, a thriving small business in Brookline's Coolidge Corner. He is also a participating board member in Brookline's Chamber of Commerce, and is co-chair of the annual holiday party.
